What inspired you to open a restaurant in Durham and how does the local culture influence your establishment?
Manish Kumar: We are foodies ourselves and wanted to fill in the gap of good North Indian Punjabi style Indian food to Durham and surrounded area.
How do you source your ingredients, and are there any local producers or suppliers you partner with?
Manish Kumar: We have partnered with U.S. Foods who in turn procure items from local North Carolina farms.
What are the signature dishes or drinks of your restaurant, and what makes them unique or special?
Manish Kumar: Chicken Punjabi Curry, Urban Turban Fiesta (mixed grill options), Urban Turban Butter Chicken, Hara Bhara Kabab (both veg and non-veg), Mango Lassi, Tandoori Lamb Chops, Soya Cheap – Malai/Tandoori.
Can you share a memorable experience or challenge you’ve faced while operating your restaurant?
Manish Kumar: We just opened door less than a week ago and so far people are liking the ambience, service, and food.
How do you engage with the community? Are there any local events or charities you support?
Manish Kumar: We are reaching out via Facebook/online marketing.
What advice do you have for others considering a career in the restaurant management business?
Manish Kumar: Have patience and boatload of money.
